Author Beth M. Ley Knotts, Ph.D. to speak at the Longville Library



   Minnesota author & nutritionist Dr. Beth M. Ley Knotts will be giving a 3 part health series presentation at the Margaret Welch Memorial Library in Longville.  Dr. Beth will be discussing information from her health book series as well as how what we eat affects our health.  As part of this presentation, a small lunch will be offered as a menu example of each presentation topic.  Dr. Beth will be taking questions and will have a book signing to follow.  The 1st presentation will be held Tues 5/20 from 12-2, with a topic of Joint Pain / Arthritis (featuring Smoked Turkey Soup).  The additional two presentations will be June 17th (topic:  immune system featuring Chili)  & July 15th (topic blood sugar / diabetes, featuring vegetable beef soup) each with a small lunch.  Whether you can attend one class or all three, the classes are free to participants after free registration at the library.  Please call 218-363-2710 to register or for more details.

   Beth M. Ley Knotts, Ph.D., has been a science writer specializing in health and nutrition since 1988 and has written dozens of health-related books, including the best sellers, DHEA: Unlocking the Secrets to the Fountain of Youth and MSM: On Our Way Back to Health With Sulfur. 

   She wrote her own undergraduate degree program and graduated in Scientific and Technical Writing from North Dakota State University in 1987 (combination of Zoology and Journalism). Dr. Beth also has her masters (1998) and doctoral degrees (1999) in Nutrition.

   Dr. Beth does nutrition and wellness counseling by phone and on line (www.recipesforlifewithdrbeth.com). She speaks on nutrition, health and healing locally and nationwide.

   Dr. Beth currently lives in Longville, Minnesota with her husband Michael Knotts. Together they produced “Recipes For Life with Dr. Beth” seen on local cable TV throughout MN, WI and NE and Youtube.

These presentations are part of the Legacy Programs which are funded in part or in whole with money from the vote of the people of Minnesota on Nov 4, 2008 which dedicated funding to preserve Minnesota’s art and cultural heritage.
